An early adopter of the Clover, Barrett Jones of Artigiano tells us, “We regularly stock coffees that go for $30 per pound retail and up. We wouldn't be able to sell those if we didn't have an option for people to try them before they committed to a full pound. Customers love it because they get to choose exactly which coffee they want, and aren't limited to a daily drip selection, and it is prepared for them fresh. Who doesn't love fresh brewed coffee?

“Clover has definitely enhanced our coffee programs. We've burned through 3 bags of Fazenda Santa Ines at $49.75 per pound un-roasted, primarily through the Clover…it’s so quick and easy that it allows us to make a cup without messing with a timer, or plunging a press pot at the right time, which is very beneficial in a high volume cafe like ours.”

“I'd say there has been an increase in awareness on the single-origin front. A lot of people who used to drink americanos have completely switched to Clover. I've had others switch from a traditional cappuccino to the Clover as their daily coffee, a testament to the clarity of the Clover cup, when it can compete with a cappuccino.”

“Clover has definitely cut down on our waste too. As things start to slow down in the afternoon, we will transition to ‘Clover-only.’ We offer the normal premium selections from our Clover Fresh Sheet, as well as a nightly selection, so all drip coffee is made per cup, translating to no waste during the afternoon/evenings.”

Our friends and neighbors to the South are known for excellent single origin coffees, the finest quality in every cup, and a counter culture that’s spot on yet under the radar. In other words, exactly the kind of place we want to be. So we were thrilled when, in 2005, Stumptown’s Annex location was one of the first to bring on the Clover.

Matt Lounsbury tells us, “The Clover has been a great addition to our Annex location tasting room. Now we have a great way to showcase our single origin coffees, and introduce customers to spectacular coffees one cup at a time.

“It’s also been a useful tool in getting retail customers exposed to more exotic (sometimes more expensive) coffees such as the Panama Esmeralda Especial. Plus, the Clover gives us a way to tell each of our farmers’ stories.”

That’s one of the great things about Seattle. Hop in the car, drive three hours, and hey, you’re in another country. So whenever we’re feeling a bit antsy, or in the mood for a regime change, we like to get up and go visit our friends at Elysian Coffee. There you can find not only an amazing menu, but also the opportunity to buy fine equipment, including - you guessed it - the Clover.

Alistair Durie, Elysian’s owner, writes, “It has revolutionized our coffee program to the point that we view it as a paradigm shift and we can say with confidence that today we are brewing better coffee with almost 100% consistency.

“With no additional promotion we have seen a significant increase in whole-bean-sales. The Clover is whole bean sale driven. Given additional promotion or support, we’d expect whole bean sales to significantly contribute to the Clover’s ROI. The Clover has also eliminated coffee waste associated with our previous drip coffee brewing program. Approximately 6 -12 liters of coffee where being wasted per day, which we valued at about $2,000 to $3,000 per year.

We’ve been Intelligentsia fans for a long time. We love them for their culture, for their destination cafes, and their fanatical commitment to great coffee. Which, by the way, you’re going to need if you want to make it in Chicago. So when they decided to buy Clover we were of course very excited to see how they would use it.

Luc, the Intelligentsia Store Manager wrote to say, “I didn't know what to expect when we decided to put in a Clover machine in our latest location, Intelligentsia Millennium Park. I knew the potential to brew quickly by the cup would open up many avenues for coffee discussion and give us the opportunity to showcase some of the newest crops, but the actual results are far greater than we initially thought.

“We utilize the machine, advertised as the ‘Clover Brew Bar’ to highlight our Top 5 offerings (coffees that are at their peak) and the ‘Local Restaurant Blend’ (an offering that changes once a month), highlighting a local chef/restaurant that also serves our coffee. What better way to flaunt these gems than from a machine that truly makes a well-rounded cup? Each delicate note is brought to the customer's palate quickly and in an efficient manner (usually +/- one minute from when they ordered it) giving everyone, barista and customer, a pleasant experience not to be forgotten.
